Lotus of Siam: The Best Thai Restaurant in America?

When a nationally respected critic declares in only the most revered food magazine in American history that a restaurant is the "single best Thai restaurant in the country," it's hard not to sit up and pay attention.

Now, ten years after the Pulitzer Prize-winning Jonathan Gold penned those words about Lotus of Siam in Las Vegas in Gourmet magazine, the restaurant has opened a branch in New York. 

The excitement and the buzz has been palpable since its early November opening, naturally. So the first chance we got, the lovely and insatiable Gael Greene and I were making plans to meet there for dinner.

Would it live up to the hype? We were eager to find out...

Razor Clams: A Southeast Asian Kitchen-Sink Tale

The dinner gathering has been impromptu and Chef Simpson of Cafe Asean is feeling a little guilty that he hasn't had time to plan what to cook.

Calmly but quickly, he zips about his spacious Manhattan kitchen, pulling out bags, inspecting his fridge. "This is a good time to eat razor clams, you know," he stops to say, showing us the big bag he acquired from the farmers' market that very morning. "They taste really good right now."

Now, while I've eaten razor clams -- or bamboo clams as they're called in some parts of Asia -- I've never even thought to cook them at home. A slab of steak, pieces of chicken, a whole turkey -- those I can comprehend. Razor clams? They had just always seemed a touch too exotic for my abilities.

Simpson, however, shares none of my apprehension, looking at me like I'm crazy and then shrugging when I ask, "How are you going to cook them?"

"It depends on what I have in the kitchen," is his simple answer. With that, Simpson fires up his stove and away we go ...

The Shop at Andaz Fifth Avenue: Style, With Some Substance

As hotel restaurants go, the shop at Andaz Fifth Avenue tries pretty hard.

Determined to cast itself as a New York restaurant, it likes to broadcast just how local it is. Its Web site rattles off a litany of New York purveyors -- eggs hail from Feather Ridge Farm in the Hudson Valley; lox comes from Russ & Daughters on Manhattan's Lower East Side, which has been providing New Yorkers with smoked fish since 1914. And there's even a self-conscious little area that sells snacks made by small, lesser-known brands in New York.

This is all in line with the in-the-know feel that the hotel, part of Hyatt Hotels & Resorts' chain of boutique properties, tries to give off. It's a pretentiousness you can already sense from the fact that it is the shop -- spelled all lowercase, the hotel insists -- and not, well, The Shop. How would the food stack up against all this posing? We decided to find out ...

Lin Heung Tea House: Hong Kong Dim Sum, The Old School

My dear friend Jeanette and I -- two women who have been driven by our stomachs in the 20 years that we have been the best of friends -- we wake up in the cool grayness of Hong Kong bleary-eyed and starving.

Even in the fog of sleepiness, our mission is clear -- we stumble out into the dusty bustle of mid-morning Hong Kong and make our way toward Central. On a corner of narrow Wellington Street lies our destination: Lin Heung Tea House, a dim sum place that has been around since 1928 and is packed most mornings with regulars who head there for a morning dumpling fix, strong pu erh (or po lei as it is known in these parts) and some quality time with the day's newspaper ...

Ciano: A Night to Remember

The idea had been to have dinner, plain and simple.

No thinking about writing about the dishes as we're eating. No scribbling of notes. No blogging. This was a celebration, after all. There should be no room at the table for work of any sort.

But the moment our food started arriving, the game plan changed. Ciano, the much-anticipated new restaurant by Shea Gallante (who greatly impressed critics and diners at the now-shuttered Cru, where he earned three stars from The New York Times' Frank Bruni), pretty much had me at shrimp balls.

Lantern: A Tranquil Beacon

Singapore can feel so densely packed and swathed in concrete that it's hard to find a place that's truly tranquil.

The moment we stepped out into Lantern, the rooftop bar at the newish Fullerton Bay Hotel, however, we knew we'd found one. The 360-degree view of the city -- with the Marina Bay waterfront on one side and Singapore's towering skyline on the other -- was breathtaking. The blue glow emanating from the hotel pool was immediately calming. I could almost feel my heartrate slowing as I heard the sound of the live band's strumming guitars drifting over. 

Just minutes before, I was outside the hotel, tiptoeing between cars and nudging my way past financial district pedestrians to get to the hotel. But now, just minutes later, my friend Vino and I found ourselves in idyllic waterfront bliss.

Winter Melon Soup: Comfort, Simple & Clear

Among the many Cantonese-style soups of my Singaporean girlhood, the one I find myself craving once temperatures start heading south in fall is a simple one: Winter melon soup.

This broth, dotted with cubes of soft winter melon and bits of mushroom and pork, isn't an elaborate or fussy soup -- it's what the Chinese call "cheng," or clear. The flavor is subtle; the experience is all about warmth and comfort.

So, when my Let's Lunch friends suggested doing a fall soup for November, I immediately started badgering my mother for her recipe ...

Birthday Noodles: To Sweetness & Longevity

One birthday is good, but two is always better.

Growing up in a Singapore, a country that follows the lunar as well as the Western calendar, celebrating two birthdays each year was always a given. Cake, flowers and presents are lovely for Western birthdays. But for lunar calendar birthdays -- or Chinese birthdays, as my family calls them -- things are several notches simpler. The star of this show is always a bowl of noodles, symbolic of longevity, a pair of hardboiled eggs, representing fertility or life. And all of this comes in a sugary soup -- "so the whole year will be sweet," as my mother says.  

For too many years in America, my Chinese birthday -- which I'm fortunate to be able to remember easily because it falls on Diwali each year -- passed with little fanfare. Sure, my parents would call New York to wish me well. But the noodles, the eggs and the sweet broth -- that always seemed like just a little too much trouble.

This year, however, as Diwali began today, I found myself temporarily stranded in Singapore due to unforeseen circumstances. So for lunch, my mother had a little treat planned: birthday noodles. "You must eat this," she said. "For luck."

Kok Kee WanTon Noodle: Battling a Memory

"It is impossible," my Singaporean chef friend Willin said to me one day, "to please everyone when you make wanton mee."

This Cantonese-style noodle dish, which is ubiquitous in Singapore, is usually served dry, with the broth in a small bowl on a side. The thin yellow noodles come swimming in a salty sauce that's usually some combination of soy sauce, a sweet and dark thick soy sauce, sesame oil and, perhaps, oyster sauce. Slivers of Chinese roast pork, vegetables and wantons (which is how wontons are spelled in Singapore) are scattered on top and a smear of chili sauce is scooped onto the side for added fire.

There is one fundamental problem with wanton mee, according to Willin. It's fairly easy for hawkers to make and there are so many variations on the dish out there -- each hawker center in Singapore usually has at least one, if not two or three, stalls selling just wanton mee. The noodles could be more al dente at one place; the gravy could be thicker and saltier at another. The wantons could be soft, boiled versions or crispy and deep-fried.

"Everyone ends up loving the exact kind of wanton mee they grew up with," Willin says. "So unless you're making that exact kind, they're not going to love it."

It's an interesting perspective, but I still wasn't sold -- until I trekked to a spacious hawker center in Singapore's Lavender neighborhood to sample the dish at Kok Kee Wanton Noodle, a little stall that had come highly recommended by some of the most discerning palates in Singapore...

 

Vino Rosina: The New Italian On The Block

 

Years ago, I found myself creeping along the quiet streets of a swath near Baltimore's Little Italy, squinting through the darkness as I tried to find Charleston, a restaurant that had been highly recommended.

Even though this roughly eight-block area was flanked by the perennially packed and fratty Fells Point on one side and the touristy Inner Harbor on the other at the time, its streets were still largely undeveloped in the late 1990s. Charleston, a Southern-inflected French restaurant, was an early adopter in the neighborhood and once we'd located it, we were glad we went. The meal was phenomenal and it was thrilling to be at a place that felt like it was on the cusp of something larger.

The husband and I recently returned to Baltimore for a short visit and decided to trek to Charleston to take a look at the place where we'd had one of the first romantic dinners of our courtship. The restaurant, helmed by the talented Cindy Wolf in the kitchen, is still there and hopping but the area around it has since become unrecognizable. Now named Harbor East, the area has sprouted gleaming condiminium, office and hotel buildings and has become as packed with restaurants, cafes and bars as its nearby neighborhoods.
